Tex-Mex Pork with Salsa
serves 4
Ingredients
1 lb pork tenderloin, 3/4" cubes
2 C rice, cooked, hot
1/4 C water
sour cream
2 ea tomatoes, diced
1/4 C onion, fine dice
1 T oregano
1/2 ea jalapeno, fine dice
1/2 C cilantro
1 T lime juice
1 T olive oil
Instructions
Combine the tomatoes, onion, oregano, jalapeno, cilantro, lime juice and olive oil to make the salsa. Season to taste.
Season the pork and sear in a hot pan. Add the salsa and water, bring to a boil, then simmer until the pork is done.
Plate the rice, top with pork, garnish with sour cream, and serve.
