Tex-Mex Pork with Salsa

Instructions

  1. Combine the tomatoes, onion, oregano, jalapeno, cilantro, lime juice and olive oil to make the salsa. Season to taste.
  2. Season the pork and sear in a hot pan. Add the salsa and water, bring to a boil, then simmer until the pork is done.
  3. Plate the rice, top with pork, garnish with sour cream, and serve.
